ข้อมูลผลิตภัณฑ์ อิมัลซิไฟเออร์
อิมัลซิไฟเออร์ (Emulsifier) เป็นวัตถุเจือปนอาหาร (Food Additive) ช่วยให้อิมัลชัน (Emulsion) คงตัวด้วยการลดแรงตึงผิว (Surface Tension) ของของเหลว โดยช่วยทำให้อิมัลชันมีความคงตัว และป้องกันไม่ให้อิมัลชันแยกเป็นชั้น ซึ่งในโมเลกุลของอิมัลซิไฟเออร์ มีทั้งส่วนที่ชอบน้ำ (Hydrophilic) และส่วนที่ไม่ชอบน้ำ (Hydrophobic) โดยจะหันส่วนที่ชอบน้ำเข้าหาน้ำ และหันส่วนที่ไม่ชอบน้ำเข้าหาไขมัน เป็นฟิล์มหุ้ม
ประเภทของอิมัลซิไฟเออร์
1. อิมัลซิไฟเออร์ที่ได้จากธรรมชาติ ซึ่งรวมถึง สารประกอบฟอสฟอลิพิด (Phospholipids) เช่น เลซิทิน (Lecithin) ที่ได้จากถั่วเหลือง และไข่แดง ไฮโดรคอลลอยด์ (Hydrocolloid) และกัม (Gum) ชนิดต่างๆ รวมถึง โปรตีน เช่น เวย์ (Whey) เป็นต้น
2. อิมัลซิไฟเออร์ที่ได้จากการสังเคราะห์ ซึ่งมักจะเตรียมจากพอลิออล (Polyols) และกรดไขมัน เช่น ไดกลีเซอไรด์ (Diglyceride) โมโนกลีเซอไรด์, มอโนกลีเซอไรด์ (Monoglyceride) เป็นต้น
การเลือกใช้งานอิมัลซิไฟเออร์
พิจารณาจากสัดส่วน ระหว่างส่วนที่ชอบน้ำ กับส่วนที่ชอบน้ำมัน (Hydrophile-Lipophile Balance, HLB) ซึ่งเป็นอัตราส่วนโดยน้ำหนักของมวลโมเลกุลส่วนที่ชอบน้ำ (Hydrophilic) กับมวลโมเลกุลทั้งหมด คูณด้วย 2 (Griffin's method) มีค่าตั้งแต่ 0 ถึง 20 เป็นค่าที่ใช้กำหนดการนำมาใช้งานของอิมัลซิไฟเออร์ (Emulsifier) ซึ่งมีรายละเอียดดังนี้
สารที่มีค่า HLB เท่ากับ 0 คือสารที่ในโมเลกุล มีส่วนที่ไม่ชอบน้ำ (Hydrophobic) ทั้งหมด และไม่ละลายในน้ำ
ค่า HBL สูงขึ้น คือสารที่โมเลกุลจะมีส่วนที่ชอบน้ำมากขึ้น กระจายตัวในน้ำได้ดีขี้น
ค่า HLB ตั้งแต่ 3-6 เป็นอิมัลซิไฟเออร์ ชนิดน้ำในน้ำมัน (Water-in-oil emulsifier)
ค่า HLB ตั้งแต่ 8-18 เป็นอิมัลซิไฟเออร์ ชนิดน้ำมันในน้ำ (Oil-in-water emulsifier)
